Healthy Living: Cooking Class: A Traditional May Breakfast
A delicious communal breakfast is a longstanding way to commemorate Rhode Island’s independence from British rule.

For over 150 years, Rhode Islanders have commemorated their state’s independence - achieved on May 4,1776 - by congregating at a local church or other location in the community to share in a May breakfast. Many Rhode Islanders continue to attend May breakfasts around the state that offer a variety of dishes and specials.
You can create your own! In this demonstration, Chef Mary Weaver will introduce her May breakfast favorites, a treat for brunch or breakfast at any time of year: Spinach Dijon Breakfast Strata (a casserole of eggs, spinach, breads, cheese and Dijon mustard) and a Cinnamon Apple Compote. The recipes will be emailed to you ahead of time in a confirmation email and reminder emails.
