Cooking Class: Vegan Delights for the Fall

Our Brunch, Lunch and Munch chefs will serve up three vegan treats.

Get ready for a delicious vegan brunch! Our October “Brunch, Lunch and Munch” demonstration will feature a three-part menu: Kale and Sweet Butternut Squash Soup, Banana Nut Bread and a luscious Avocado smoothie.

All of the recipes will be shared in advance, so you can cook along. Here’s a preview of ingredients to have on hand for the soup:

Kale and Sweet Potato Soup

  • 2 tablespoons olive oil
  • 1 medium yellow onion (roughly chopped about 2 cups)
  • 1 cup red bell pepper (chopped)
  • 4 garlic cloves (crushed)
  • 1 teaspoon turmeric
  • 1 teaspoon Cajun seasoning
  • 1 medium sweet potato (chopped)
  • 1 bunch Lacinato Kale (chopped)
  • 4 cups chicken stock
