Cooking Class: Feasting from the New England Seaside

Chef Liz Barbour will share her tips about buying, storing and preparing seafood at home.

The beautiful shorelines of New England offer an amazing variety of fresh seafood. During this cook-along class, Chef Liz Barbour of The Creative Feast will share her wisdom and demonstrate two easy recipes – Southwest Fish Tacos and a Garlic Shrimp Appetizer -- that you and your family will love.

​Chef Liz built her cooking career in a variety of Boston's catering and restaurant settings and now is a cooking instructor with Liz Barbour's Creative Feast. Liz is a regular guest on New Hampshire’s WMUR Cook’s Corner.

If you’re new to cooking, Liz will guide you step-by-step to build your confidence and cooking skills and inspire you to cook more healthfully at home. You’ll learn how to select quality ingredients and combine them to create amazing dishes.

What you will need, if you would like to cook along with the Chef?

Garlic Shrimp Appetizer

½ -3/4 pound shrimp, shelled and deveined (U-15 count is a good size)

Coarse salt 8 tablespoons

olive oil

3 large cloves garlic, peeled and coarsely chopped

1 dried red chili pepper cut into 2 pieces or 1/8 tsp crushed red pepper

½ teaspoon smoked paprika

1 tablespoon parsley, chopped 1 loaf of artisan bread

Southwest Fish Tacos

Southwest Seasoning-make your own seasoning with the ingredients below or purchase a Southwest seasoning mix if you prefer.

¼ cup smoked paprika

1 tsp chipotle power or ¼ tsp cayenne pepper

1 tablespoon granulated garlic

1 tablespoon ground coriander

2 teaspoons ground cumin

2 teaspoons Kosher salt

Tacos

12 small corn or flour tortillas

1 ½ pounds tilapia fillets or scrod or cod

4 cups red cabbage, thinly sliced

1 small red pepper, thinly sliced

¼ cup red onion, minced ½ cup cilantro, chopped

1 cup mayonnaise

3 tablespoons apple cider vinegar

1 tablespoon honey

2 limes, cut into wedges
