Cooking Class: A Sweet Idea – Plants for Dessert

In this session of the Life Lessons series, watch Rouxbe-trained plant-based home chef Amy Rosen create two delicious desserts.

Besides learning about some of the benefits of following a plant-based diet, you’ll be treated to a hands-on demonstration of how to make two easy and healthy plant-based desserts: No-Bake Carrot Cake Bites and Chocolate Avocado Pudding.

Here are the ingredients you’ll need if you’d like to try your hand:

No-Bake Carrot Cake Bites

  • 3/4 c peeled and shredded carrots
  • 1/2 cup maple syrup
  • 1 cup old-fashioned oats
  • 1/2 cup almond butter
  • 1 cup flaked unsweetened coconut
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 tsp ground cinnamon

Chocolate Avocado Pudding

  • 2 ripe avocados
  • 1/2 c cacao powder
  • 1/4 c plant-based milk
  • 1 tsp vanilla extract
  • 1/4 c maple syrup (sweetener of choice)
  • Pinch of salt
