Winter months have us craving some good ol' comfort foods! This month we will be making "Almost Like Mom’s Chicken and Dumplings". This will be a hands-on (online) workshop with Michelle Fox, Culinary Nutritionist. We are continuing our series of Eating for More Energy. Michelle will teach us how to make a traditional dish with maximum nutrition and abundant flavor. Bring your questions (and your appetite) and plan to join us for dinner!

Ingredients:

FOR SOUP:

  • 1 tbsp ghee, butter or coconut oil
  • 1 cup chopped onion
  • ½ cup chopped celery
  • 2 medium carrots, chopped
  • 3 cloves garlic, finely chopped
  • 2 cups chicken broth
  • 2 cups alternative milk (almond milk preferred)
  • ¼ tsp sea salt
  • ¼ tsp ground black pepper
  • 3 tbsp arrowroot starch (to replace cornstarch)
  • 3 cups cooked shredded chicken breast (canned ok)
  • 1 tbsp apple cider vinegar
  • 1 tbsp chopped fresh parsley

FOR DUMPLINGS:

  • 1 cup gluten-free all-purpose flour
  • ¼ tsp sea salt
  • ¼ tsp baking powder
  • 1 large egg
  • 3 tbsp water
