About the Instructor: April Dodd, lead culinary instrutor at the Milk Street Cooking School has had a long career, managing Middlebury College's food preservation program, working in a bio bakery in France, founding a culinary skills training program in Nairobi, and working as a consultant to the UN Food and Agriculture Organization.
