This month, Michelle Fox, Culinary Nutritionist, will be back to share her Unparmesan Chicken with Roasted Potatoes and Veggie Melange. You do not want to miss this hands-on workshop as we continue our Eating for More Energy series. Plan to prep your veggies ahead of time as this meal has a few moving parts. We will be using seasonal vegetables. Come with your curiosity and leave with a full and happy belly.

Ingredients for Unparmesan Chicken with Roasted Potatoes and Veggie Melange:

4 chicken breasts

2 eggs

3/4 cup gluten free bread crumbs (or regular bread crumbs)

1/2 cup olive oil

4 tbsp avocado oil, ghee, coconut oil, or full-fat butter

1/2 cup balsamic vinegar

3 big handfuls raw green beans (woody ends chopped off)

6-8 baby red potatoes (chopped in quarters)

2 red, yellow or orange bell peppers (long slices)

1 large red or yellow onion (long slices)

1/2 cup black olives (sliced in half)

1/2 cup green olives (sliced in half)

2 tbsp capers (optional)

sea salt and pepper to taste
